No, it isn't rude. Sometimes it is a good idea. I knew a guy who visited a Thai Restaurant at a mall food court because he knew they offered vegan food. Their Spicy Tofu Stir Fry was what he was after and when he ordered it, the lady asked him if he wanted it to be spicy. Hoping for something as authentic as possible, he asked the lady to make it the way she would eat it.
